The Ecuadorian cocoa, since 1860 has had worldwide recognition for its floral and fruity flavor. Despite its decline due to pests, it has maintained its reputation as been of excellent quality. However, Ecuador is not a major producer of chocolate, only raw materials. The Nutella® is the first gianduja milk chocolate in the world, produced in Italy and exported to other countries. Quinoa has a history of consumption of more than 5000 BC in Andean countries and is considered the food of vegetable origin with better protein quality. Cocoa and quinoa have polyphenols, minerals and vitamins with antioxidant activity, beneficial to the body. Because of all this, the development of a product based on these two commodities would benefit Ecuadorian producers and consumers. The aim of this study was to evaluate the effect of cocoa (Theobroma cacao) powder lean and quinoa (Chenopodium quinoa) toast in the development of a spreadable cream with similar physicochemical characteristics to Nutella®, which also contribute with antioxidants and meets nutritional requirements for people from 20 to 40 years, promoting the use of Ecuadorian raw materials. Furthermore, the application of sensory tests sought to determine the acceptance level. Design was used completely randomized (DCA) factorial arrangement 32 with 3 replications. The factors were: Toasted quinoa (10, 12, 14 g / 100g) and lean cocoa powder (10, 12, 14 g / 100g). The response variables measured were moisture, water activity and pH. It was determined that the best combinations of toasted quinoa and lean cocoa powder, were 1 (14 g / 100 g toasted quinoa 14 g / 100g lean powdered cocoa), 2 (14g / 100g toasted quinoa 12 g / 100g lean Cocoa powder) and 4 (12g / 100g toasted quinoa 14 g / 100 g fat cocoa powder). The three treatments showed no significant difference in the preference test for consumers. Due to the antioxidant content of treatment 1, it was chosen to perform an acceptance test with intention to purchase, 90% of judges is willing to buy.
