The development of digestive chocolate focuses on creating a functional chocolate product that offers both nutritional and digestive health benefits. The recipe typically includes cocoa, and digestive ingredients like dietary fiber, herbal plant powder, or natural laxatives. The goal is to improve digestion while keeping a good taste, texture, and appeal to consumers.During the development process, various amounts of digestive ingredients are added to the chocolate. They are tested for physical properties such as pH, melting behavior. Sensory tests assess flavor, aroma, appearance, texture, and overall consumer acceptance. The resulting formulation is also tested for nutritional value, antioxidant activity, and effectiveness for digestion. Stability studies check shelf life and how well the product can be stored. Results from these evaluations show that digestive chocolate can be a convenient and tasty functional food with potential health benefits, particularly for gut health and digestion.Additionally, computer modeling studies were done to examine how major plant compounds interact with digestive enzymes like α-amylase and lipase. The optimized recipe showed good texture, taste, melting behavior, and increased activity against digestive enzymes. These studies indicated that gingerol, menthol, and cardamom , triphala, brahmi, tulsi had a strong binding affinity with digestive enzyme receptors, highlighting their digestive benefits. The study concludes that digestive chocolate could be a new functional nutraceutical that improves patient adherence and offers digestive benefits.
